Vinification: Night mechanical harvest at low temperature. By direct pressing and aging on the fine lees in temperature-controlled vats.
Tasting: The aging in vats, on the fine lees, with batonnage, gives power and finesse to this Chardonnay which expresses the fruit. The nose is subtle, floral in character, with notes of fresh butter. The palate is rich, round and full of freshness.
Serve slightly chilled, to be enjoyed with a veal blanquette, a rabbit with mustard, an andouillette, with roasted white meats, grilled fish...
